What I Eat
When I’m craving eggs
Soft boil 3 or 4 large brown eggs (~6.5 minutes if you want them to be jammy).
Add 1/2 of an avocado on the side.
Sauté mushroom and onions as a side.
Please add salt and pepper.
Optional: Add cottage cheese for more protein.
When I’m forcing myself to eat eggs
Toast an English muffin or sourdough bread.
Fry an egg. I like when the yolk is runny.
Mash up 1/2 an avocado.
Assemble egg McMuffin.
Please add Everything But the Bagel seasoning.
Optional: Add sautéed veggies and/or a drizzle of sriracha.
When I’m hungry, but I don’t want to be in the kitchen for more than 5 minutes
Add Trader Joe’s Almond Beverage (Unsweetened Original) to a 1/2 cup of Trader Joe’s Organic Rolled Oats with Ancient Grains & Seeds. Only add enough milk to cover the oats. Microwave as per instructions on the oatmeal packet.
Mix in frozen berries (blueberries, raspberries, blackberries).
Add 1/2 banana as a garnish.
Add a tablespoon of almond butter to the center.
Sprinkle on some cinnamon and nutmeg.
Drizzle on some honey.
Optional: can also scoop on some chia seed pudding (see below).
When I’m sick of everything
Add Trader Joe’s Almond Beverage (Unsweetened Original) to three tablespoons of chia seeds. There should definitely be more milk than seeds.
Mix in some maple syrup (or honey) and vanilla extract.
Sprinkle some cinnamon and nutmeg.
Refrigerate for 2+ hours.
Optional: top with almond butter and/or fruit.
When I haven’t gone grocery shopping in weeks
Toast an English muffin or sourdough bread.
Spread almond butter on one side and raspberry jam on the other. If you have no jam, sprinkle on some sugar instead.
When I’m feeling fancy
Sauté potato and yellow onion with Trader Joe’s Soy Chorizo.
Heat up a tortilla or two.
Scramble two eggs and mix in some Mexican style cheese.
Assemble breakfast tacos.
Optional: add salsa, cilantro, and/or sriracha.
